This is a photo of oysters we harvested for our dinner! Believe it or not, oysters are a good source of protein, iron, and calcium. Oysters have rough, oval shaped shells. They are generally whitish-gray in outer shell color, and their inside shell is usually a porcelain white. Oysters are bivalve molluscs. They eat by extracting algae and other food particles from the water they are almost constantly drawing over their gills Common predators of oysters are crabs, sea birds, seastars, and humans. Oysters are extremely sensitive to water quality and susceptible to coastal pollution. They can also retain toxins in their flesh, making them unhealthy for human consumption.
